Retribution Distilling Co. Ex-Bourbon Quarter Cask
A mixed new make spirit cask, including 15% of redistilled heads and tails, this is a truly unique and one-of-a-kind offering. The remaining spirit contains 67 litres of Maris Otter fermented with ‘Bond’ yeast (strain 007) a British Ale yeast, and Ares whisky yeast. The final 38 litres were Maris otter fermented with “Mango Madness” a kveik style yeast for tropical flavours. This may be a “Franken-spirit” cask, but already it shows bright notes of lychee and peppermint, nutty chocolate and dark toffee after just two years and promises to be a rare and remarkable dram when we bottle it at 5 years old (in three years time).
White Peak - Ex-Islay Cask (held cider-brandy matured whisky)
A unique cask. Ex-Islay quarter cask (from a well known peaty distillery), which held lightly-peated, cider-brandy matured whisky for one year. Now filled with White Peak’s signature lightly-peated new make, we expect notes of spiced apple pudding, smouldering BBQ embers and a touch of burnt caramel as the liquid matures. A totally unique offering connecting the only two lightly-peated English distilleries together through the journey of wood. 5 year maturation planned and expected ABV around 55%. As always, we taste before we bottle and will let you know if we think it needs longer in cask in advance.

Retribution English Peat
A very unique cask, filled with peated spirit produced using peat extracted from the Somerset levels. This single malt has been hand smoked by Richard at Retribution in a homemade kiln, smoking green malt by burning the peat he air dried on the farm. With 50% peated spirit combined with 50% unpeated new make (Maris Otter Barley), this will exude the distinctive flavours of Retribution, with a hit of English peat – a first for any English Whisky. All bottles will be pure cask strength, single cask.

Henstone, Old Dog Corn Whisky, PX-seasoned Firkin
Hidden away at the back of one of the Henstone maturation containers after their recent move, this PX seasoned Firkin spent 4 years ageing their “old Dog” corn whisky spirit before Chris remembered it existed. Not wanting this delicious dram to escape we snapped it up and bring it to you – a tony batch of maximum 60 bottles cask strength English corn whisky, aged in a 50 litre Firkin, seasoned with sweet PX sherry. Already offering notes of toffee, vanilla, panettone, chocolate and dried fruits – this will be the perfect dram for Autumn Winter 2026 when bottled at 5 years old. One for the Bourbon, Sherry and English whisky fans alike. Hurry, when it’s gone, it’s gone.

English Distillery, Un-peated, Ex-Bourbon Cask (10 Years)
An un-peated cask of English Distillery liquid (SG049), maturing in a first fill ex-Bourbon cask on site at the distillery in Norfolk. Renowned for producing exceptional spirit, this cask will be bottled at 10 years old as a single cask at around 55% ABV to showcase the spirit character. See also the sister cask (SG043) which is identical except for peated spirit – the perfect pair to enjoy side-by-side when matured.

Adnams Triple Malt Whisky, New American Oak
East Anglian Barley, Wheat and Oats combine in a triple mash bill, aged exclusively in new American oak casks. This is a flavoursome dram exhibiting unique flavours of baking spices, coconut and chocolate, as well as more savoury notes that provide depth and intrigue to the liquid. Bottled at 12 years old (at 55% ABV), this will be one of the oldest English Whiskies on the market, and a single cask, exclusively through Still In Cask.

The Lancaster Spirits Company, Tawny Port
Expanding our partnerships with English distilleries, we present this Tawny Port seasoned 100L cask filled with single malt spirit Produced at Lancaster Spirits Co. Distillery. Made using a mixture of distillers and brewers malts, this ‘new make spirit’ has notes of Manuka honey sweetness as well as deep chocolate from the roasted malts. Combined with this port seasoned cask we’re expecting great things as this barrel matures on-site in Lancaster. But hurry, only 100 shares available for this truly unique English Whisky.

Cooper King MB Roland Bourbon Cask
The 101st cask filled at Cooper King Distillery in Yorkshire, this 90L Ex-Bourbon cask is a dark-fired Bourbon from MB Roland (a craft distillery in Western Kentucky). Using Hickory to smoke a portion of the corn gives this cask a truly unique flavour profile compared to more commercially available ex-bourbon casks. Each 70cl bottle will be cask strength from this single cask, with only around 100 bottles in total

Spirit of Birmingham Dark Beer Seasoned, English Oak Cask
This English Oak 100L cask by Jensen’s Cooperage will head to Spirit of Birmingham where it will be filled with their dark beer for 6 months, before re-filling with their new-make spirit for 3 years. You will get a bottle of cask-strength whisky PLUS TWO FREE bottles of Spirit of Birmingham beer from this very cask (one to enjoy now and one to keep back to drink alongside the whisky!).
The beer was disgorged August 2023 and once you pay P&P you’ll receive the beers imminently. This is a wonderful collaboration of English coopering, distilling & ingredients that will make for a very distinct and special bottle for you to enjoy in the near future.
